The knife for those who don’t like big knives, but could actually do with something a little better than ‘small’.

Originally a bespoke concept for a customer who wanted something that would have all the benefits of a big blade, with none of the downsides, the Elegantia combines many of our favourite blade aspects in to one package. With enough knuckle clearance to allow you to work the board as hard as you need to, the continual curve makes rocking your way through finer ingredients a doddle. With the depth of blade you can use your fingers to guide your strokes safely, and then when all the prep’s done it’s probably the best chicken carving knife we’ve ever made.

Made from scratch in our Wiltshire workshop, the blade is 14c28n and small batch-hardened to the optimal 60HRC. Hand-thinned, the cutting knife is substantially less than 1mm thick behind the cutting edge, creating an effortless experience that’s akin to using a scalpel on air.

Each of our STRATUS handles are subtly unique, and are presented here in our favourite (and distinctive) contoured variants. Created over months of collecting our excess polymer resin in to custom-made troughs, they’re comfortable, striking and durable.
