The best all-rounder out there.

Much like the perfect hangover cure, the perfect sharpening system doesn’t exist.

It’s all about trade-offs (skill vs cost vs time vs result) and up until now there’s not really been a leader in the pack. Having used the Horl for a good long while, we’re now completely convinced that it has by far and away the best balance of constraint vs performance.

While we strongly (and passionately) advocate the gentle and frequent use of a honing steel, at some stage you’ll need to re-establish your edge and the Horl 2 is a fantastic way of doing just that.

The grit on the diamond wheel is just right to get that new edge on, and the ceramic wheel will help remove your burr and get you ready for chopping. The system holds your knife at the optimal 15º with the magnetic block, allowing you to concentrate on getting a nice, consistent edge.

There’s a bit of a learning curve (but isn’t there always?) and in any event you’re always welcome to give us a call if you need any help.

While the basic system will just about do the trick, we can’t recommend the Premium Pack (with finer stones and a strop) highly enough as it makes a significant difference to both the final edge and the amount of time and effort it takes to achieve it. 

We also heartily support using a second holder as this will allow the blade to be held more securely along it’s entire length, allowing for a longer and more satisfactory grind and far greater angle consistency.
