As with many of our knives, this was originally created as a bespoke commission. Finding existing paring knives to be too flimsy, and with too small a handle, we were asked to design something that would fit in the hand for long periods of time (with great comfort) but not to veer too far from the path of a classic 8cm blade.

And so here we are … not exactly the paring knife re-invented, but certainly working towards the most perfect form (though we say so ourselves…)

Made from scratch in our Wiltshire workshop, the blade is 14c28n and small batch-hardened to the optimal 60HRC. Hand-thinned, the cutting knife is substantially less than 1mm thick behind the cutting edge, creating an effortless experience that’s akin to using a scalpel on air.

Each of our STRATUS handles are subtly unique, and are presented here in our favourite (and distinctive) contoured variants. Created over months of collecting our excess polymer resin in to custom-made troughs, they’re comfortable, striking and durable.
