There are certain types of specialist knives where everyone seems to have an idea of what the perfect knife should be, yet consensus remains elusive. We continue to refine our understanding of gralloching and boning, but it was with a great deal of relief that we teamed up with Andrej (aka The Fish Daddy) to design his perfect filleting knife – this is a man who clearly knows his way about the piscatorial landscape and with whom we’ve created a filleting knife we’re extraordinarily proud of.

Each blade is made from our favourite 14c28n, where not only does the heat treatment (at 60HRC) shine through, but also the added corrosion resistance from nitrogen being added in to the mix reaps dividends when working continuously in wet & salty environments.

With a rigid blade 17cm blade, individually hand-sharpened, and a large grippy black linen micarta handle, it’s a knife that feels at home in the hand as soon as you pick it up.

We look forward to a long and enjoyable relationship with Andrej as he cooks (and slap) every fish in the world – but for now we’re chuffed to bits to present a limited, numbered edition of 60 of The World’s Best Filleting knife…
