Combining heft with scalpel-like precision, our Tom Aikens knife was designed in collaboration with the youngest chef in the UK to win two Michelin stars.

The 8″ blade is balanced our perfectly by a substantial (but not ungainly) handle, while the sleek and continuous elipse of the cutting edge – and ample knuckle clearance – shows the knife’s roots as the workhorse for a busy chef in a busy kitchen.

Made from scratch in our Wiltshire workshop, the blade is 14c28n and small batch-hardened to the optimal 60HRC. Hand-thinned, the cutting knife is substantially less than 1mm thick behind the cutting edge, creating an effortless experience that’s akin to using a scalpel on air.

Each of our STRATUS handles are subtly unique, and are presented here in our favourite (and distinctive) contoured variants. Created over months of collecting our excess polymer resin in to custom-made troughs, they’re comfortable, striking and durable.
