The world's best steak deserves the world's finest steak knives and our collaboration with Tom Hixson has resulted in a truly exquisite pairing.
We were first introduced to award-winning butcher Tom Hixson of Smithfield by one of our regular customers, an ardent fan of their meat who suggested that we might wish to consider collaborating with them.
Always a believer in the power of word of mouth, we did indeed drop the chaps at Hixson a note to see if they were interested and were delighted when they came back with a resounding yes…and so the idea of a collaboration was born.
As a previous gold medal winner of the prestigious World Steak Challenge, not to mention numerous Great Taste awards, designing a steak knife with Hixson seemed the obvious choice…and the result is a staggeringly handsome pair of knives indeed.
Hixson Heritage
Hixson was founded by Tom HixsonĀ over 50 years ago. Tom was the son of a Walworth butcher and came from a family who had been involved in the meat trade for generations. On the market since 1935, his seventy years of work ensures their family tradition continues to this day.
Tim, his youngest son, has visited places such as Argentina, Australia and USA to source the finest produce. This innovation throughout the years has enabled us them sustain their status as a leading meat purveyor.
Tom Hixson’s careful sourcing process has been developed over many years to identify the best producers from Britain and around the world. Once they find the most skilled farmers, they build working relationships with them and, using their combined expertise and experience, review their breed selection and rearing techniques, whilst ensuring the surroundings and lifestyle of animals combine perfectly to create produce of the highest standard. This time and effort has been rewarded with numerous accolades including Great Taste Awards and gold medals at the World Steak Challenge.
Michelin star chefs and London’s finest restaurants have utilised Hixon’s Ā offering since 1963 and they now enable home cook enthusiasts to replicate that fine dining experience at home with meat delivery direct to door.
Superlative slicing, sublime style
We make our classic Savernake steak knives with the same care and attention as our chefs knives – they are, to all intents and purposes, small chef knives in their own right.
The concave blade and pronounced shape slice effortlessly through even the thickest piece of beef with only the lightest touch – the sharpness and fine entry of the blade negating the requirement for serration which generally only serves to tear the meat.
For our special edition Hixson pair we managed to source some of the finest Turkish figured walnut – the very same wood often chosen for some of the world’s most expensive shotgun stocks. The richness of the wood and detail of the grain are shown to beautiful effect in the contours of the handle, finished to a high shine and ensuring a smooth and tactile feel in the hand. A red liner complements the walnut handle beautifully and adds a pop of colour to this handsome pair of knives,Ā presented in a custom-made English walnut presentation box with smart black Richlite lid.
